Hi,
I love salami and want to make my own.
Every year I bring back 2 or Warthog from a hunt and I am tired of the same old stuff, I want to make my own salami. I have made the Russian Cooked salami, it came out very nice and everyone enjoyed it. But it wasn't the tradition dry cyred salami that I want.
The first batch of dry cured salami I made, wasn't a success.
So please, if there is anyone who can help, I would appreciate it.
Basil

I thought about making my own too a while back. After reading up a lot and asking around, I decided to give it a pass. Making proper salami is NOT easy, and that is an understatement.
